Our group’s recent paper, titled “Quantitative Raman microspectroscopy for water Our group’s recent paper, titled “Effects of Acyl Chain Unsaturation on Activation Energy of Water Permeability Across Droplet Bilayers of Homologous Monoglycerides: Role of Cholesterol” has been published in Langmuir, a publication of the American Chemical Society. The paper is coauthored by five undergraduates, Maria Lopez (’17 Biochemistry), Jacqueline Denver (’17 Biochemistry), Sue Ellen Evanglista (’17 Chemistry), Alessandra Armetta (’18 ACS Chemistry), Gabriella Di Domizio (’18 ACS Chemistry), and Dr. Lee. This paper investigates the relationship between lipid self-assembly at an aqueous droplet-droplet interface, and the process of water permeation across bilayer membranes. Using the droplet interface bilayer, we have investigated a membrane containing cholesterol to elucidate the role of cholesterol with these membranes by measuring its influence on water permeability and activation energies. Our findings allow us to delineate the exquisite interplay between membrane properties and structural components and understand the balanced contribution of each.
